1 tbsp oil
1 pound boneless pork steak, cubed
12 oz Abundant Foods Green Chile sauce
16 oz Abundant Foods Mashed Potatoes
8oz shredded Colby Jack Cheese
10oz frozen corn kernels
Preheat oven to 350 degrees F.
Place corn in a small sauce pot and cover with water. Bring it to a rapid boil over high heat and then turn heat to medium and simmer uncovered for 5 minutes until cooked and heated through. Drain corn and reserve.
Heat sauté pan over medium high heat. Add oil and wait 1 minute to heat oil. Add pork and brown on all sides. When browned, add green chili sauce and heat through until you see the sauce simmering .
To assemble the pie: in a 6 x 9 casserole dish, place corn on the bottom of the dish creating a single layer. Next, pour the green chili sauce/pork mixture over the top, creating a second layer. Then, spoon the mashed potatoes over the top of the green chili sauce/pork layer to create a third layer. Sprinkle the cheese over the top of the mashed potatoes.
Bake uncovered for 30 minutes.
Remove from oven, let cool for 5 minutes, spoon into a bowl, and enjoy!
