Pork Shepard’s Pie

Prep Time: 40 minutes                Cook Time: 45 minutes               Serving Size: 4

Ingredients:

1 tbsp oil

1 pound boneless pork steak, cubed

12 oz Abundant Foods Green Chile sauce

16 oz Abundant Foods Mashed Potatoes

8oz shredded Colby Jack Cheese

10oz frozen corn kernels

Directions:

  1. Preheat oven to 350 degrees F.

  2. Place corn in a small sauce pot and cover with water.  Bring it to a rapid boil over high heat and then turn heat to medium and simmer uncovered for 5 minutes until cooked and heated through.  Drain corn and reserve.

  3. Heat sauté pan over medium high heat.  Add oil and wait 1 minute to heat oil.  Add pork and brown on all sides.  When browned, add green chili sauce and heat through until you see the sauce simmering .

  4. To assemble the pie:  in a 6 x 9 casserole dish, place corn on the bottom of the dish creating a single layer.  Next, pour the green chili sauce/pork mixture over the top, creating a second layer.  Then, spoon the mashed potatoes over the top of the green chili sauce/pork layer to create a third layer.  Sprinkle the cheese over the top of the mashed potatoes.

  5. Bake uncovered for 30 minutes.

  6. Remove from oven, let cool for 5 minutes, spoon into a bowl, and enjoy!
