Pumpkin and Black Bean Soup

Prep Time: 5 minutes                   Cook Time: 30 minutes                  Serving Size: 4-6

Ingredients:

3 cups Abundant Foods Spicy Pumpkin Soup

1 1/2 cups Abundant Foods Adobo Black Beans

1/2 tsp Ground Black Pepper

Garnish:

Dollop of Sour Cream

and/or Toasted Pumpkin Seeds

Directions:

  1. Heat the pumpkin soup up on medium for 3-4 minutes (or until hot), stirring occasionally

  2. In a separate pot, heat the black beans up on medium for 5-6 minutes or until hot.  It is important that you stir the beans and keep them from sticking to the bottom of the pan.

  3. Once both are fully cooked, remove from heat and mix them together in a separate pot.

  4. If you are looking for more of a chunky consistency, serve as is.  If you would like more of a pureed consistency, use an immersion blender to partially or completely puree the soup.

  5. Top with sour cream and/or toasted pumpkin seeds and serve.

*TIp – this is a great soup to consume either hot or cold during the summer months.
