Vegetarian Black Bean Burger

Vegetarian Black Bean Burger

Prep Time: 15 minutes                   Cook Time: 15 minutes                  Serving Size: 4 patties

Ingredients:

15.5 ounces Abundant Foods Adobo Black Beans – drained

1/2 cup re-fried beans

1 tablespoon Cuban seasoning

1/2 onion – minced

1 red bell pepper – minced

3/4 cup panko bread crumbs

1 egg (or substitute egg whites for less fat!)

4 Whole Wheat Burger Buns

1 Lime

1 Avocado – pitted, peeled and sliced

Fresh Cilantro -optional

Directions:

  1. Preheat oven to 375.

  2. Line a rimmed baking sheet with aluminum foil and spray with non-stick cooking spray.

  3. In medium bowl add: black beans and partially mash using a fork. Add: re-fried beans, cuban seasoning, onion and bell pepper. Mix well. Add panko bread crumbs and egg. Mix well.

  4. Spray a 1/2 cup measuring cup with non-stick cooking spray.

  5. Scoop 4 – 1/2 cup portions onto baking sheet. Shape each into patties. Bake for approximately 10 minutes; turn over. Bake additional 5 minutes.

  6. Place patties on buns and top each with avocado slices, a squeeze of lime juice, and cilantro.  Serve immediately.
